75cl - Sparkling wine

This Champagne Rosé is made with the three grape varieties of the Champagne region. 8 to 12% of our red wine of Champagne matured in barrels is added. For this elaboration, we only select the best grapes of our old Pinot Noir and Pinot Meunier vineyard. 

Cultural practices : traditional, done in a sustainable way and influenced by ecological methods. Average age of the vines: 25 years. More than 40 years for the parcels that are selected for the elaboration of our red wine.

Grape-varieties and vineyard :

45% Pinot Meunier . Terroirs of Chavot, Mancy, Boursault, Vaudancourt, Le Breuil. Many different soils with a dominant of silt, marl and clay. Chalky subsoils. 
30% Pinot Noir . Old vines of Chavot. Soil fairly deep with an important presence of clay, flint and schist. Chalky subsoils. 
10% Chardonnay . Terroirs of Chavot and Vaudancourt. Soils with fine clay and a blend of limestone and alluvial deposits. Chalky subsoils.
15% of our red wine depending on the years.
40% of which are reserve wines of past years kept in barrels

Method of vinification :

Grapes are picked up by hand when fully ripen, and traditionally pressed 
Alcoholic fermentation in vats, foudres and barrels 
Malolactic fermentation partly made 
Ageing for 6 months and light filtration before bottling during the spring time 

Disgorging and dosage : disgorging « à la volée » (by hand), and dosage at 7-8 Gr/l.

This Rosé has a bright colour and is noticeable thanks to its elegant and fruity aromas. Stewed strawberry notes are in perfect harmony with raspberry and vanilla touches. Red fruit notes are delicate in the palate and develop a special taste that will be particularly appreciated by women. The finish is long, sweet and creamy.

Wine and food matching : perfect in aperitif and also with white meats. It will develop its aromas at dessert like with a red fruit charlotte or a raspberry vacherin : meringue with fruits and whipped cream.
